I used a combination of red, green and yellow bell peppers for this recipe. I also had to use dried basil instead of fresh.
Start with 1 cup water.
Put 1 stick butter in a heavy saucepan
Add water and turn on medium heat 6-8 minutes or until mixture comes to a full boil.
It is boiling well. I always hate these recipes where something has to boil for a certain amount of time because I am always afraid I haven't boiled it enough.
Add 1 cup all purpose flourReduce heat to low, stir in the flour and garlic salt vigorously until mixture leaves sides of pan and forms a ball.
Getting closer but still stirring.
Now it is forming a ball and coming away from the sides. This is like a cream puff.
Add 4 eggs one at a time beating well after each addition until the mixture is smooth.
Mixed well.
1 1/2 teaspoons dried basil. Use 1 1/2 Tablespoons of fresh
1/2 cup finely chopped red bell pepper.
1 cup Asiago or Parmesan cheese
Mix well.
Using a tablespoon drop onto a parchment lined cookie sheet.
Sprinkle each with a little additional cheese.
They are ready for the oven. Place in a preheated 400 degree oven. Bake for 8-10 minutes. These can be made to this point and then frozen to be used later. They can stay in the freezer for up to 2 months.
Ready to serve. They are very flavorful.
Red Pepper Asiago Bites Recipe
1 cup water
1/2 cup butter
1 cup all purpose flour
1/2 teaspoon garlic salt
4 eggs
1 1/2 cup shredded Asiago or Parmesan cheese
1/2 cup chopped red bell pepper
1 1/2 Tablespoon finely chopped fresh basil
Place in a preheated 400 oven. Bake for 8-10 minutes.
