4 Million Dollar Chicken Rice-A-Roni Casserole

I'm not sure why this recipe is named 4 Million Dollar Casserole but it sure taste like a million bucks.  This is a quick and easy recipe that will allow you to put dinner on the table pretty quick.  You could even make it ahead of time and bake it when you get home.  There are some things you can do to make it even easier.


You can make this with or without peas. 
 
I cooked my own chicken breast but you can use a rotisserie chicken if you like.  I find and this is just me that I can cook and cut up chicken breast faster than I can clean off a rotisserie chicken.

The one thing that takes the longest amount of time is cooking the box of Rice A Roni.  Cook it per the box directions. 
Add 1 cup sour cream to the rice. 
Then add one can cream of chicken and a can of cream of mushroom soup
The recipe gave some suggestions of additions to the recipe and peas was one of them.  You could use frozen peas and carrots mixed and I might do that next time.  I always keep peas in my freezer.  I love these frozen bright green peas.  
Cut up your chicken. You need 1 pound of chopped chicken. 
Now you are going to shred 1 cup cheddar cheese and 1/2 cup Parmesan cheese.  You could probably use the green can Parmesan cheese but it won't be the same as fresh grated.
Melt one stick of butter
Add the melted butter to the mixture.  Season with salt, pepper and garlic powder to taste. 
Place in a sprayed 9x13 baking dish.  Place in a preheated 350 oven and bake for 30-35 minutes until it is nice and bubbly and golden brown. 
Fresh from the oven.  It might could have stayed in the oven a couple more minutes and gotten a little browner on top.  Some french fried onions might add a nice crunch on top too.  It also was good left over and reheated.

1 lb cooked and shredded chicken breast
1 box chicken flavored Rice a Roni
1 can cream of chicken soup
1 can cream of mushroom soup
1 cup sour cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
1 stick melted butter
1/2 teaspoon garlic powder
salt and pepper

Preheat oven to 350. Bake 30-35 minutes.

Rocky Road Cookies

 This is another new cookie for 2025.  It has all the flavors of rocky road ice cream.  I will admit I was concerned about freezing the marshmallows but they did fine.  There's a lot of ingredients but they are worth it. 

These are so good warm and fresh from the oven. 

Sometimes you have to look for the mini marshmallows. 
Start with 2 sticks softened butter
Add 3/4 cup brown sugar
3/4 cup sugar.  Mix that well.  It should be a light yellow color. 
2 large eggs
Now the recipe calls for 1 1/2 teaspoon corn syrup.  I did not have any corn syrup and did not want to buy some for such a small amount.  So I headed to Google to find out what can be substituted; honey, maple syrup, agave nectar, and golden syrup call all be substituted.  Also you can make your own 1 cup sugar and 1/4 cup warm water.  So I had honey and I used that.
1 teaspoon vanilla
1 teaspoon baking soda
1/2 teaspoon salt.  Mix all these things together.
1/2 cup special dark cocoa powder.  If you don't have that use the cocoa you have.  Mix well. 
2 1/3 cups all purpose flour.  Add a little at a time, mix between adding. 
Add 12 oz chocolate chunks.  This can be chips, mini chips, chunks whatever you like or have. 
1 cup ChocoMaker mini marshmallows. I don't suggest using the big ones.
This is what the marshmallows come in.  I found these at Walmart.
1 cup chopped walnuts.  You can use pecans if that is what you have. 
Shop them fine. 
Add all these goodies and mix well. 
It will be a stiff dough. I put it in the fridge for a little while before scooping.  It makes scooping a little bit easier. 
I used my new small scoop so the mini chips work better.  Scoop on a parchment lined cookie sheet.  Preheat oven to 375.  Bake for 6-8 minutes.  These are small cookies so I started with 6 and watched them.  You don't want them to over bake.  
Enjoy them while they are hot.  You will thank me for that.  There's a whole lot of goodness in these little bites.

Rocky Road Cookies Recipe

2 sticks soften butter
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
1 1/2 teaspoon corn syrup or one of the substitutes listed above
2 large eggs
2 1/3 cup all purpose flour
1/3 cup special dark cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
12 oz chocolate chunks
1 cup walnuts
1 cup ChocoMaker mini marshmallows 
 Preheat oven to 375 bake 6-8 minutes depending on size of the cookies.
