White Chocolate Peppermint Cake Mix Cookies

Yes another cake mix cookie.  But the reason I baked this one was the peppermint.  I love peppermint, especially at Christmas.  I changed the recipe just a little bit in that I didn't use crushed candy canes.  I used the peppermint chunks that are available in the bag like chocolate chips. Part of the reason I did this was because the cane chips can get gummy when baked.  The peppermint chunks melt more evenly but still has that peppermint flavor you love.  So there are two options for you.

The smell of these peppermint cookies just says Christmas. 
I will admit I was a little concerned with making these cookies with cream cheese in them.  As some of you know I make my cookies and freeze them.  So I had to test these cookies after they were frozen to make sure the texture held up and it did.
Start with a white cake mix.
Add 1/3 cup water
3 egg whites
4 oz softened cream cheese. Mix well.  Now once again I made a double batch of these cookies because otherwise I won't use that extra 4 oz of cream cheese.  I have saved extra cream cheese before and I always forget about it.  So I doubled my recipe.
1/2 cup powdered sugar
1/2 cup all purpose flour.  Mix well.
4 large candy canes crushed.  I added 1/4 cup and a little extra of the peppermint pieces.
1/2 cup white chocolate chips.
If your dough seems a little sticky add a little more flour.  I added 1 Tablespoon and that seemed to make it less sticky.
It is a pretty dough that smells good too.
This is one recipe scooped and ready for the freezer.  When ready to bake place in a preheated 350 oven and bake for 12-14 minutes.

1 box white cake mix
1/3 cup oil
3 egg whites
4 oz softened cream cheese
1/2 cup powdered sugar
1/2 cup all purpose flour, add more if it is needed
4 large candy canes crushed or 1/4 cup peppermint pieces
1/2 cup white chocolate chips
Preheat oven to 350.  Bake for 12-14 minutes.

Buffalo Chicken Celery Bites

I discovered this appetizer in the Kraft magazine.  I don't remember the name of it right now.  This has everything you like about chicken wings all in one bite.  The beauty of this recipe is you can do as little or as much as you like.  I just tried it out for us one Saturday for a football game, but if you were making it for a party it wouldn't take much longer.
It almost looks like pimento and cheese on celery.
You can use any wings sauce you like.  I just grabbed this one off the shelf at the store.
I shredded one cooked chicken breast.  I used the mixer to shred it while it was still hot.  I recommend doing this because it shreds the chicken pretty fine and if you are stuffing the celery you don't want big pieces.  It is worth it as a time saver too.  Add a couple of Tablespoons wing sauce to the chicken.  Add as much or as little as you like.  You know how spicy you like your chicken and some people want more moisture in it too.
Mix it well.
Add a couple of Tablespoons sour cream and mix well.
Now you want to stuff the celery.  Use a small spoon and your fingers to stuff it in the little groove.
Then if you want some ranch dressing just drizzle it down the stick.

Cooked chicken shredded
wing sauce
sour cream
celery
ranch dressing.

Sugar Plum Fairy Cookies

It's cookie time again!!!  I am starting out this year's cookies with a cute fun little cookie that young and old alike with enjoy.  This cookie takes a couple of shortcuts and there is nothing wrong with that.  These would be great to cook up with your own little Sugar Plum.

You really can't tell as much from the picture but they are a beautiful purple color.

So this recipe called for half the boxes of jello so I doubled the recipe.  I am only showing you the ingredients for a single recipe.

A single recipe calls for 1 stick of softened butter.  This was the ingredient from the cookie mix.
Add one egg.  Mix those well until they are fluffy.
For a single recipe add half of the 3 oz box of Berry Blue jello.  Now you see why I doubled it.  I don't have another use for half a box of jello.
Add half the cherry jelly.
Mix that well.  Not a very pretty color right now.
Add the 17.5 oz sugar cookie mix
Add 2 Tablespoons water
The color is better.
Now scoop the dough.
Roll in sanding sugar.  I ended up using a couple different colors that I had on hand.
Put on a parchment lined baking sheet.  Place in a 375 preheated oven and bake for 11-14 minutes.  The cookies will spread.
Here is my try headed for the freezer.  See I have different colors.
But they are fun make and fun to eat.  Maybe for a Nutcracker ballet party?

Sugar Plum Fairy Cookie Recipe

17.5 oz sugar cookie mix with ingredients from mix.
1/2 of a 3 oz box cherry jello
1/2 of a 3 oz box of Berry Blue jello
2 Tablespoon water
sugar or sanding sugar

Preheat oven to 375 and bake for 11-14 minutes.

Cheesy Chicken Broccoli and Rice Casserole

This was the casserole I made the other day to try out my homemade cream of soup.  It turned out really well.  You can make your own cream of soup or use canned and it will still turn out really well.
I forgot to take a picture after it came out of the oven all nice and golden brown.  This is before it went in the oven.
It doesn't take many ingredients and you probably have most of them in the pantry already.  You might not have the corn flakes but this is a good reason to keep some around.
Start with 2 cups cooked rice.  You can use either white or brown.
2 cups chopped chicken.
2 cups broccoli florets cut up.  The beauty of this dish is you throw everything in one bowl to mix.
Add 1/2 cup mayo
1 can cream of chicken soup.  This is my homemade version.
1 1/2 cups shredded cheese.
I added a little more cheese on top when I put it in the 9x13 baking dish.
Melt 2 Tablespoons butter
Cover the top with crushed corn flakes.
All covered with cornflakes
Melted butter
Drizzle the butter on top of the flakes.  Place in a preheated 350 oven and bake for 30-35 minutes.


Cheesy Chicken Broccoli and Rice Casserole Recipe

2 cups cooked chopped chicken
2 cups broccoli chopped up
1 can cream of soup
2 cup cooked rice
1 1/2 cups shredded cheese
1/2 cup mayo
1/2 -3/4 cup crushed corn flakes
2 Tablespoons melted butter

Preheat oven to 350.  Bake for 30-35 minutes.
