Chocolate Chip Banana Bread


Remember all those bananas we had.  This is still some of them.  I made small loaves this time and sent them to work to be shared.  
The chocolate chips on top sank to the bottom.
Remember to save those peels for the garden.
Start with 1 stick soften butter
1/2 cup brown sugar
1/2 cup sugar.  Mix well.
Add 2 eggs
1 Tablespoon milk.
1/2  teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon vanilla
2 cups all purpose flour
3 mashed bananas
1/2 cup semi sweet mini chocolate chips
Add some additional chips on top.  Bake in a preheated 325 oven.  Bake large loaf pans 65-70 minutes.  The smaller one start checking around 30-40 minutes.  Test with a toothpick.
I will admit that the bottoms stuck to the pan and they didn't come out of the pans very pretty.  It wasn't my day.

2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 mashed bananas
1 teaspoon vanilla
1 Tablespoon milk
1 stick softened butter
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1/2 cup semi sweet mini chocolate chips

Preheat oven 325.  Bake for 65-70 minutes for large loaves.

Banana Bread

We had an over abundance of bananas at our house a few weeks ago.  I bought them and so did the husband.  He can't eat that many before they go bad.  So what do you do when you have too many bananas?  You make banana bread.
This recipe made two large loaves.  One went into the freezer for another day.
Save the banana peels and add them to the ground around some of your bushes in you garden.  Camellia bushes really like them.  That is where mine went.
Cut up 3 bananas.
Mash said bananas.
Melt 1/4 cup butter
1/4 cup canola oil
1 egg
3/4 cup light brown sugar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1 teaspoon vanilla
1 1/2 cups all purpose flour
Place the batter in a sprayed loaf pan.  Place in a preheated 350 oven. Bake for 50-65 minutes. Check the bread after 50 minutes.
Enjoy now and enjoy later when you take it out of the freezer.

Banana Bread recipe

1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon kosher salt
1 1/2 cups mashed bananas
1/4 cup melted butter
1/4 cup canola oil
3/4 cup brown sugar
1 egg
1 teaspoon vanilla

Preheat oven to 350.  Bake 50-60 minutes.

New Mexico Chile Stuffed Pork Tenderloin

This is the last of the Hatch chilies recipes.  You really should go and get some and try them.  Fresh Market is the only place I have found them around here.  There could be other places.  I will admit that this did not turn out pretty at all.  Some things I would do very differently.
The first problem I had was that my pork tenderloin wasn't one piece but two.  The recipe called for a butterflied piece.  I had this one in the freezer and wasn't sure.  Next time I would make sure.
It also called for red bell peppers but I had green so I used that.  Red would have made it more colorful, they are also a little sweeter.
Start with 3/4 cup mozzarella cheese.
1 1/2 cup Hatch chilies diced.
One chopped onion
2 red bell peppers finely diced.
So this was my pork tenderloin.  Most do come in two pieces.
I tried cutting a small slit in the middle to stuff some of the mixture inside.
Then I put some on both sides.
Then put the two sides together.  I didn't have any twine so I used the skewers.  It doesn't look pretty.
Add it to the roasting pan.
Add chicken broth to the bottom of the pan.
Take 2 Tablespoons butter.
Melt the butter
Brush it on top.  Add salt and pepper.
Cover the pan. Place in a preheated 350 oven.  It says to cook it 40 minutes but mine need a lot longer.  Also after the 40 minutes under the cover it came out not very pretty because it had no color to it.  I put it back in to brown it up a little bit.
I took it out a second time but it still didn't look done.  I turned the broiler on and let it stay under it for a while to brown up and cook through.
I would do things a little bit differently next time but it was good.

Hatch Chile Stuffed Pork Tenderloin Recipe

1 package pork tenderloin butterflied
1 large onion
2 red bell peppers
1 1/2 cup Hatch chilies
2 Tablespoons butter melted
salt and pepper
1/2 cup chicken broth
3/4 cup mozzarella cheese

Preheat oven to 350.  Depending on the size of your tenderloin bake for 40 minutes.  I would almost bake it without covering the pan.  Let stand 10 minutes.

Brown Butter Cherry Cobbler

Here's another fresh cherry recipe for you and boy is it good, especially with some ice cream.

I've really put that cherry pitter to good use this year.
To 1 1/2 lb pitted cherries add 1/3 cup sugar
1 Tablespoon cornstarch.  This is going to thicken up your filling.
1 teaspoon vanilla
Mix that well and set aside.
Mix 1/2 cup all purpose flour
1/2 cup brown sugar
3/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
Put 1/4 cup of butter in either a cast iron skillet or baking dish.  Place the pan in the oven as you are preheating it to 350.
You want the butter to melt and maybe get a little brown.
Pour in the flour mixture.
I will admit I was worried about this pie.
Add the cherries around. Place in a preheated 350 oven and bake for 30-35 minutes.
Top with some ice cream and enjoy.
