We have all tried oatmeal cookies before, but this recipe takes it up a notch. Now this one takes a little longer because you have to toast the oatmeal and then let it cool. So mix these up when you have some time or either toast the oatmeal one day and mix the next. I think you will like these. Toasting the oatmeal and the pecans adds a little nuttiness to their flavor.
Looks like an ordinary oatmeal cookie but it is not.
The recipe calls for raisins but if you don't like them you don't have to put them. You could add cranberries or neither if you like.Start by melting a stick of butter in a 15x10 or jellyroll pan. Now when I make these again I might melt it in a microwave safe bowl in the microwave.
Chop 1 cup pecans
The butter is melted
Add 3 cups regular oats
Add the pecans. Now mix them well. I think they would get coated better in a bowl instead of the pan.
Spread out evenly on the pan and bake in a preheated 425 oven for 15-18 minutes. Stir them often. I didn't leave mine in that long because the pecans were beginning to get dark and the corner pieces got a little too toasted. Just watch them.
3/4 cup brown sugar and 1/2 cup sugar. Mix well with 2 sticks of softened butter
Add 1 egg
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
The first stirring of the oats.
1 1/2 cups all purpose flour. Mix well.
1 cup raisins.
Let the oats cool completely. I ended up spreading them out to cool. Add to the flour mixture.
Scoop up and flash freeze before adding to a zip lock bag. When baking bake in a 375 oven for 10-12 minutes.
Now this is a good cookie. Nice and golden brown.

3 cups regular oats
1 cup chopped pecans
3/4 cups brown sugar
1/2 cup sugar
2 sticks softened butter
1 egg
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup raisins
Preheat oven to 375 bake for 10-12 minutes.
